1/2 c butter
1/4 c sugar
3 overripe bananas
2 whole eggs
1/4 c sour cream or plain yogurt
1 c white whole wheat flour
3/4 all purpose flour
1 tsp baking soda
1 tsp vanilla
Preheat the oven to 350 F.
Cream butter and sugar.
Add bananas, mix to combine.
Add eggs and then sour cream, mix to combine.
Mix together dry ingredients, add slowly to wet. Mix to combine.
Add vanilla.
Pour into loaf pan. Bake for 55-65 minutes.
1.5 x the recipe makes 2 smaller loaves or one bunt/springform pan.
